Made with vegetables that are readily available at the Co-op—beets, turnips and cabbage—borscht is a rich, cozy winter stew. This dish is incredibly flexible, so you can easily adapt it to whatever’s in the fridge.

One thing that keeps me loyal to the Co-op is our extensive cheese section. We have a fridge dedicated solely to cheese and my adventurous taste buds are always down to explore its possibilities.
